Wow your vegan guests and watch them chow down on Neat Burritos with Mango & Avocado Salsa! YUM!
1Prepare neat into crumbles. Meanwhile, prepare the Spanish rice according to package directions.
2Make the Salsa. Combined chopped ingredients into a bowl. Toss to combine and season to taste with salt and pepper.
3Assemble the burritos. On top of a flour tortilla, layer refried beans, rice, neat, and top with salsa. Roll the burrito, folding in the sides.
4Brown the outside of the burritos, making them crispy and delicious! Heat a non-stick skillet over medium heat. Spread vegan butter on the outside of the rolled burrito. Sear each side until golden brown.
5Serve warm, with additional salsa on the side. For an extra fresh zip, squeeze a little lime juice over the top of the burrito just before serving.
