Rich, decadent, soft, and chewy chocolate cookies with just the right touch of mocha flavor from Kaffree Roma.
SERVINGS: Makes 2 dozen cookies.
2 cups All-Purpose Flour
¾ tsp. baking soda
½ tsp. Salt
2 tsp. Cocoa powder
¼ cup Kaffree Roma
1 c. softened plant-based butter
½ c sugar
½ c brown sugar
1 egg or plant-based egg substitute such as the neat egg
2 c. Enjoy Life plant-based choc chips or chocolate chunks
- Preheat oven to 350 degrees.
- In a large bowl of a stand mixer, blend butter with sugar and egg. In a separate bowl, mix together dry ingredients. Gradually add dry ingredients to the butter blend. Add chocolate chunks and stir until the chocolate is evenly dispersed.
- Line a cookie sheet with parchment paper. Drop cookies by rounded tablespoons onto the cookie sheet. Bake for approximately 10 minutes, or until the edges are firm. The cookies will still be soft in the center and will firm up slightly as they cool.
