Loma Linda Taco Filling Shepherd’s Pie
Bake your very own delicious shepherd’s pie using Taco Filling as a meat alternative, combining it with peas, carrots, onion, and corn topped with a mashed potato crust and spiced with paprika. Golden on the outside and comfortingly warm on the inside, this shepherd’s pie is a great option for winner dinners that the entire family will love while keeping completely vegan.
- 1 can Loma Linda Taco Filling
- 1 onion, finely chopped
- 2 cups frozen peas and carrots
- 1 cup frozen corn kernels
- 3 cups mashed potatoes
- 1/2 tsp paprika
In large bowl, combine chorizo, onion, peas, carrots and corn; transfer to 11″ x 7″ x 2″ baking dish. Spread potatoes over top and sprinkle with paprika.
Bake in preheated 375F oven for 40 minutes or until heated through and top is golden.
Optional: substitute Loma Linda Taco Filling with Loma Linda Chorizo for a different take on Shepherd’s Pie.
