  1. Tried this recipe with regular-thickness bread (vegan). Used a double-burner non-stick griddle with vegan butter. A quick coating of the batter and onto the medium heat skillet, the coating seemed to boil at first and almost steamed the bread instead of browning it. Do not disturb the toast while it cooks and browns – the coating will peel off, exposing soggy bread underneath. I would suggest using thicker bread also so that the bread doesn’t soak up the batter immediately. The flavor was good with maple syrup, it might take a few attempts to get the texture right (not mushy inside). I used Silk almond milk (original). I’m glad to have a recipe to use for vegan french toast! Will make again with thicker bread and will leave it to cook undisturbed before flipping. Thanks for the recipe!
