Kaffree Roma Autumn Pumpkin Muffins with Orange Walnut Glaze

Put on your favorite fall sweater and serve up these plant-based pumpkin muffins, featuring warm notes of espresso from Kaffree Roma and a bright citrus orange glaze.

 

SERVINGS: Makes 18 muffins.

 

INGREDIENTS:

Muffins:

18 paper cupcake liners

1 ¾ cup flour

1 teaspoon baking soda

½ teaspoon baking powder

Pinch of salt

1 teaspoon ground cinnamon

½ teaspoon fresh ground nutmeg

½ teaspoon ground cloves

1 ½ tablespoons Kaffree Roma granules

½ cup coconut oil or unflavored cooking oil of choice

2 neat eggs or plant-based egg substitute

1 cup pumpkin puree

1 ½ cup sugar

½ cup raisins

 

Orange Walnut Glaze:

1 ½ cups of powdered sugar

¼ cup orange juice

½ cup chopped walnuts

 

DIRECTIONS:

Preheat the oven to 350 degrees.  Line regular size cupcake pans with 18 cupcake papers.

SERVINGS: Makes 4 personal sized pumpkin stews or 1 large pumpkin for sharing

 

INGREDIENTS:

4 small single-serve pumpkins (approximately 6” in diameter) or 1 large pumpkin for sharing (approximately 10-12” in diameter).  Recommended pumpkin varieties:  “Long Island Cheese”, “Cinderella”, or “Field Trip”)

 

2 packs neat meat replacement mix, any flavor, prepared into crumbles according to package instructions

2 tablespoons avocado oil or cooking oil of choice

1 cup fresh mushrooms, sliced

4 cloves garlic, minced

½ cup chopped celery

½ cup chopped sweet onion

1 teaspoon fresh thyme, chopped

1 teaspoon fresh rosemary, chopped

2 tablespoons fresh parsley, chopped

2 cups vegetable broth

1 28oz. can diced tomatoes

Sure to be a party pleaser, this fun appetizer or entree combines two of the best things ever…tater tots and nachos into one plant-based dish!

 

SERVINGS: Makes 8-10 servings.

 

INGREDIENTS:

1 bag frozen tater tots (approximately 2lbs)

2 pouches neat Original, Mexican, or Southwest, prepared into crumbles according to package instructions

1 package, 7oz. Daiya shredded cheese, or other plant-based cheese

 

Suggested Toppings:

Plant-based sour cream

Green onions, chopped

Black olives, sliced

Pico de gallo

Guacamole

Fresh Lime, squeezed

Cilantro, chopped

Jalapeno, sliced

 

DIRECTIONS:

Bake the tater tots according to the package instructions.  Remove from the oven and layer the prepared neat crumbles and the shredded cheese on top of the tater tots.  Return to the oven for 3-5 minutes, or until the cheese is melted. Top with suggested toppings to your liking and serve while still warm.

Oat milk makes for the creamiest, most flavorful plant-based latte.  With Kaffree Roma, you can now enjoy your latte without the caffeine jitters…so maybe you should even have two! 

 

SERVINGS: Makes 1 serving.

 

INGREDIENTS:

2 teaspoons Kaffree Roma

1 ½ cups plant-based milk

 

DIRECTIONS:

In a small saucepan over medium-low heat, vigorously whisk together Kaffree Roma and the oat milk until the Kaffree Roma is dissolved and the milk is warmed to drinking temperature.  The more you whisk, the frothier your latte will become!  Pour into your favorite mug, sip, and savor!

Kaffree Roma Mocha Chocolate Chunk Cookies

Rich, decadent, soft, and chewy chocolate cookies with just the right touch of mocha flavor from Kaffree Roma. 

 

SERVINGS: Makes 2 dozen cookies.

INGREDIENTS:

2 cups All-Purpose Flour

¾ tsp. baking soda

½ tsp. Salt

2 tsp. Cocoa powder

¼ cup Kaffree Roma

1 c. softened plant-based butter

½ c sugar

½ c brown sugar

1 egg or plant-based egg substitute such as the neat egg

2 c. Enjoy Life plant-based choc chips or chocolate chunks

DIRECTIONS:

Preheat oven to 350 degrees.
In a large bowl of a stand mixer, blend butter with sugar and egg. In a separate bowl, mix together dry ingredients. Gradually add dry ingredients to the butter blend. Add chocolate chunks and stir until the chocolate is evenly dispersed.

Kaffree Roma Mocha Salted Caramel Latte

The favorite salted-caramel chocolate candy is now turned into a latte!  This easy recipe will be a secret treat to keep all to yourself or share with a special friend!

 

SERVINGS: Makes 1 drink.

 

INGREDIENTS:

10 ounces plant-based milk

1 tablespoon chocolate syrup

1 tablespoon caramel syrup

¼ tsp. sea salt

2 teaspoons Kaffree Roma

Whipped cream (dairy-free)

Caramel sauce for drizzling

Chocolate sprinkles or salted caramel chocolate pieces for garnishing

 

DIRECTIONS:

In a small saucepan over medium-low heat or in the microwave, heat the milk to drinking temperature, do not allow to boil.  In your favorite mug, add chocolate and caramel syrup, salt, and Kaffree Roma.  Pour the warmed milk into the mug and stir until syrups are melted and Kaffree Roma is dissolved.  Top with whipped cream, caramel drizzle, and chocolate sprinkles or pieces. Enjoy!

Kaffree Roma Biscotti Latte

Hints of lemon and anise in this caffeine-free latte will remind you of fresh biscotti from your favorite bakery.  And we won’t stop you from taking it a step further and dunking a biscotti as you sip!

SERVINGS: Makes 1 drink.

 

INGREDIENTS:

2 teaspoons Kaffree Roma

8 ounces plant-based milk

½ tsp vanilla extract

¼ tsp anise extract

½ tsp agave (if desired)

¼ tsp grated lemon zest

 

DIRECTIONS:

In a small saucepan over medium-low heat or in the microwave, heat the milk to drinking temperature, whisking the milk to create a bubble foam as it heats, do not allow to boil.  In a heat-safe glass or mug, add Kaffree Roma, vanilla, anise, and agave.  Pour the warmed milk into the mug and stir until Kaffree Roma is dissolved.  Sprinkle the lemon zest on top of the latte.  Enjoy!

1 cup plant-based milk

1 teaspoon vinegar

¾ cup sugar

2 teaspoons Kaffree Roma

1 ½ cups plant-based milk

1 scoop vanilla ice cream

Caramel sauce, optional

DIRECTIONS:

Loma Linda Sloppy Joe Pockets

A neat and tidy way to eat Loma Linda Sloppy Joe!  These puff pastry triangles are stuffed with plant-based protein and sure to be a hit at your next gathering!
SERVINGS: Makes about 30 triangles.
INGREDIENTS:
2 pouches Loma Linda Sloppy Joe
1 package frozen puff pastry sheets, thawed
¾ cup plant-based butter, melted
DIRECTIONS:
Preheat oven to 350.  Line a baking sheet with parchment paper.
Unroll thawed phyllo dough and keep it covered with a moist towel, so it doesn’t dry out while you’re working with it.
Brush melted butter on one sheet of dough.  Add another sheet on top and brush that with butter as well. With the dough long-wise in front of you, cut the dough from top to bottom in 3 strips.
