Soft and Chewy neat egg Gingersnaps

The neat egg makes for a modern plant-based version of old-fashioned molasses cookies that will fill your home with the sweet smells of the holidays!
SERVINGS: Makes 2 dozen cookies.
INGREDIENTS:
1 cup brown sugar
1 cup plant-based butter, softened
¼ cup molasses
1 neat egg, prepared
1 tsp. Vanilla extract
2 ½ cup flour
2 tsp. Baking soda
1 tsp. Cinnamon
1tsp. Ground ginger
½ tsp. Salt
¼ cup sugar for coating
DIRECTIONS:
Preheat oven to 325 degrees.  Line a baking sheet with parchment paper.
Using an electric mixer, beat together the brown sugar, butter, molasses, and neat egg until fluffy and well combined.  Add the vanilla.
In a separate bowl, mix together the flour, baking soda, cinnamon, ginger, and salt.  Gradually add flour mixture to butter mixture and thoroughly combined, but do not over mix.
Roll rounded tablespoons of the dough into balls, place on a cookie sheet 1 ½ inches apart.

Lavender Lemon Cookies with the neat Egg
A sweet and savory cookie, the perfect ending to a summer time meal.
Yields 12 cookies.
1 cup All Purpose Flour
½ tsp. baking soda
1/2c. softened butter
1/4 c sugar
1/4c brown sugar
1 neat egg, prepared according to package instructions
2-3 tsp. chopped lavender leaves
Grated peel from 1 lemon

Blend butter with sugar and neat egg.  Mix in dry ingredients.  Add lavender and lemon and stir all together.
Drop by rounded teaspoons onto an ungreased cookie sheet.  Bake at 350, for about 10 min.

neat Blueberry Crumb Muffins

Bake a vegan treat for the entire family with these vegan blueberry muffins, made with the neat egg. Topped with a delicious crumb cover and packed with fresh blueberries, these muffins are perfect for desserts, breakfasts, and between-meal treats.
For Blueberry Muffin Base:

2 ¼ cups flour
1 cup plus 2 tbsp sugar
3/4 tsp salt
3 tsp baking powder
1/2 cup coconut oil, melted
1.5 neat eggs (1.5 tbsp of neat egg powder mixed with 3 tbsp of water)
1 cup plus 2 tbsp almond milk
1 ½ cups of blueberries

For Crumb Topping:

½ cup sugar
1/3 cup flour
¼ cup vegan butter
½ tsp cinnamon
Pinch of nutmeg

Preheat oven to 400F. Prepare a muffin tin with 12 cupcake/muffin wrappers inside.
In a stand mixer, combine ingredients for muffin base (except blueberries). Then, fold in blueberries into the mix.
